Avocado Salad

A great light summer salad.

Salad Ingredients:

  • 2 big ripe avocados, cut into quarters then 1 cm slices.
  • 1-2 cucumbers, 5" long,  sliced into 4mm slices.
  • 1/4 red onion, finely sliced.
  • 2 tablespoon dill, finely chopped or cilantro leaves.

Dressing Ingredients:

  • 3  tablespoons extra virgin olive oil.
  • 3 tablespoons lime or lemon juice.
  • 1/4 teaspoon red pepper flakes.
  • 1/4 teaspoon cracked black pepper.
  • 1/2 teaspoon salt.

Instructions:

  1. Put all salad ingredients into a large bowl. Drizzle over lime juice and oil, sprinkle with salt, pepper and red pepper flakes.
  2. Toss gently using your hands, gently separating the avocado slices as you go. Taste and add more lime if needed.
  3. Serves 5 people.
