Brenda & Veronica’s Three Day Pickles

This is an easy replacement for making canned pickles.

Pickles

Ingredients:

  • approx 20 pickles
  • 2 cups of white vinegar
  • 4 cups of white sugar
  • 2 tbsp. pickling salt
  • 1 tsp, turmeric
  • ½ tsp, celery seed
  • 1 tsp. mustard seed
  • 1 white or yellow onion thinly sliced
  • Slice cucumbers 1/8 inch thick {leave skin on}.
  • Slice Onion 1/16 inch thick.

Directions:

  • Layer in ice cream pail alternating … layer of cucumbers then layer of onions.
  • Fill ice cream pail 2/3 full.
  • Combine vinegar, sugar, salt, turmeric, celery seed, mustard seed in a pot to make brine.
  • Boil brine and cool to room temperature {do not remove spice bits}. Brine does not have to completely submerge cucumbers.
  • Then pour over cucumbers and onions, and place in the fridge for 3 Days… {you can taste test after first day!}
