Creamy Tomato Penne

A great vegan dish.

Ingredients:

  • 1 tablespoon vegetable oil.
  • 1/2 cup diced white onion.
  • 2 tablespoon chicken broth.
  • 1 3/4 cup chunky tomatoes, undrained.
  • 1/2 cup whipping cream.
  • 2 cups dry penne noodles, cooked drained and kept warm.
  • 1/2 cup parmesan cheese, grated.
  • 1/4 cup green onion, sliced.

Instructions:

In a large skillet, heat the oil. Add white onions and sauté 2 to 3 minutes or until onion is tender. Add broth, cook for 1 minute. Stir in tomatoes and juice, cream, pasta and cheese. Heat thoroughly, stirring occasionally. Sprinkle with green onions.
