
Elizabeth's Stuffed Chicken Breasts
Another great recipe of Elizabeth's.
Ingredients:
- 1 package of Stove Top Chicken Stuffing (120 gram box).
- 8 boneless chicken breasts.
- 2 tablespoon of butter (melted).
- 1/4 teaspoon black pepper.
- 1/4 teaspoon garlic powder.
- 1/4 teaspoon paprika.
- 1 can of Cream of Mushroom Soup (284ml).
- 1/2 cup white wine (dryer wine is better).
- Toothpicks.
Instructions:
- Make the stuffing as per instructions.
- Spray with cooking oil a large Pyrex pan that would hold the chicken breasts.
- Rinse chicken breast, dry with a paper towel.
- With a sharp knife, make a large cut on the top of the breast, spread apart and sprinkle with pepper.
- Add stuffing (1 - 2 tablespoons) or whatever will fit and close and secure with a tooth pick. Place in baking dish.
- Repeat until all breasts are filled.
- Pour melted butter over chicken breast.
- Sprinkle with salt, pepper, garlic powder and top with paprika. Cover with foil.
- Bake at 300 degrees - 1 1/2 hour or until golden brown.
- Check during cooking, to ensure there is liquid in the pan, so the chicken steams.
- Combine soup and water/wine, heat in a small sauce pan, stir constantly until bubbling. Place cooked chicken breasts on serving platter, pour soup mixture over chicken and serve.
