Elizabeth's Stuffed Chicken Breasts

Another great recipe of Elizabeth's.

Ingredients:

  • 1 package of Stove Top Chicken Stuffing (120 gram box).
  • 8 boneless chicken breasts.
  • 2 tablespoon of butter (melted).
  • 1/4 teaspoon black pepper.
  • 1/4 teaspoon garlic powder.
  • 1/4 teaspoon paprika.
  • 1 can of Cream of Mushroom Soup (284ml).
  • 1/2 cup white wine (dryer wine is better).
  • Toothpicks.

Instructions:

  1. Make the stuffing as per instructions.
  2. Spray with cooking oil a large Pyrex pan that would hold the chicken breasts.
  3. Rinse chicken breast, dry with a paper towel.
  4. With a sharp knife, make a large cut on the top of the breast, spread apart and sprinkle with pepper.
  5. Add stuffing (1 - 2 tablespoons) or whatever will fit and close and secure with a tooth pick. Place in baking dish.
  6. Repeat until all breasts are filled.
  7. Pour melted butter over chicken breast.
  8. Sprinkle with salt, pepper, garlic powder and top with paprika.  Cover with foil.
  9. Bake at 300 degrees - 1 1/2 hour or until golden brown.
  10. Check during cooking, to ensure there is liquid in the pan, so the chicken steams.
  11. Combine soup and water/wine, heat in a small sauce pan, stir constantly until bubbling. Place cooked chicken breasts on serving platter, pour soup mixture over chicken and serve.
