Frieda's Honey Curry Chicken

Thanks Frieda!!! Best served with mashed potatoes or white rice.

Ingredients:

  • 1/4 cup Butter or optionally Margarine.  
  • 1/2 cup Honey.
  • 1/4 cup Dijon Mustard.
  • 1 teaspoon salt.
  • 1 teaspoon curry.
  • 3 skinless chicken breasts, cut into smaller pieces.

Instructions:

  1. Heat oven to 375 degrees.
  2. Melt butter/margarine in glass baking dish.
  3. Stir in honey, mustard, salt and curry.
  4. Roll chicken in mixture.
  5. Arrange in a single layer and cook for 45 to 60 minutes. After 30 minutes of baking flip chicken.
  6. To thicken the sauce, put 1 tablespoon of cornstarch and 1 tablespoon cold water in to a container and shake, then add this to the sauce, stir and heat until thickened.
