Sauce-less Ratatouille
This is a very simple sauce-less Ratatouille-like recipe.
Ingredients:
- 1 zucchini, cut into chunks.
- 1 medium white onion, cut into chunks.
- 2 celery stalks, sliced.
- 1/2 pound fresh green beans, tipped & broken half.
- 3 medium ripe red tomatoes, chopped including the juice.
- 8 asparagus, broken into large pieces.
- 1 green pepper, chopped into large pieces.
- 1 yellow pepper, chopped into large pieces.
- 1/4 cup corn niblets.
- 1/4 cup peas.
- 1/2 teaspoons dried oregano.
- 3 cloves garlic, finely minced.
- 1/2 teaspoon dried parsley.
- 1 teaspoon Greek salad spices.
- 1/2 teaspoon salt.
- 1/8 teaspoon black pepper.
- 1 tablespoon extra virgin olive oil.
Instructions:
- In a large bowl, mix all the vegetables together,
- Place in a 2 quart ( 2 litre ) casserole.
- Sprinkle with herbs and spices.
- Drizzle olive oil over.
- Stir well, cover and back at 350F (180C) oven for 25 to 30 minutes.
- Should be served with rice.
