Sauce-less Ratatouille

This is a very simple sauce-less Ratatouille-like recipe.

Ingredients:

  • 1 zucchini, cut into chunks.
  • 1 medium white onion, cut into chunks.
  • 2 celery stalks, sliced.
  • 1/2 pound fresh green beans, tipped & broken half.
  • 3 medium ripe red tomatoes, chopped including the juice.
  • 8 asparagus, broken into large pieces.
  • 1 green pepper, chopped into large pieces.
  • 1 yellow pepper, chopped into large pieces.
  • 1/4 cup corn niblets.
  • 1/4 cup peas.
  • 1/2 teaspoons dried oregano.
  • 3 cloves garlic, finely minced.
  • 1/2 teaspoon dried parsley.
  • 1 teaspoon Greek salad spices.
  • 1/2 teaspoon salt.
  • 1/8 teaspoon black pepper.
  • 1 tablespoon extra virgin olive oil.

Instructions:

  1. In a large bowl, mix all the vegetables together,
  2. Place in a 2 quart ( 2 litre ) casserole.
  3. Sprinkle with herbs and spices.
  4. Drizzle olive oil over.
  5. Stir well, cover and back at 350F (180C) oven for 25 to 30 minutes.
  6. Should be served with rice.
